If you want to shoot something like the Falcon, or a Star Destroyer in a
TIE fighter, X-Wing, or anything else fort that matter, there are a
couple of things to take into account.
(1) You want to live.
(2) You want to destroy the target (or your arse is toast when you
get back).
Therefore it is a good idea to be travelling fast enough to evade
incoming fire, but there is no point bombing past at mach 150, as you
wont have time to fire at them either. Just try it in any of the X-Wing
games and you'll know what I mean. Therefore, you need to slow down, and
as a result become an easier target. This is why Luke and Han were able
to destroy the TIE fighters.
Besides, if you watch the TIE fighters attacking the Falcon again, you
will notice that they aren't going that fast.
