So that you can provide context to your message. But you're meant to trim
it down to just the salient parts. There are a vast number of pages out on
the web that cover email netiquette, but here's an example:

It does in the email itself, I didn't realise it would paste it all into the
chat on the ifis website itself. I understand the concept of quoting and
trimming, I just thought it would have made more sense to automatically hide
the quoted bits at the bottom of emails, since a lot of people reply through
emails and not through the website itself, so every time anyone wants to
reply but not quote anything they have to delete the end of their email each
time and it just seems like an extra bit of hassle that isn't necessary >.<
